Salmon Croquettes

INGREDIENTS:
1 can of Sockeye Salmon
1 egg
1/2 cup of breadcrumbs
1/4 cup of cooking oil
PREPARATION:
Open and drain excess juice from the salmon. Empty can into a mixing bowl.
Add the egg and breadcrumbs. Mix until evenly blended.
Heat oil in a sautee or frying pan on medium high.
Scoop up a medium-size ball of your salmon mix and flatten into a patty.
Fry, browning each patty on low heat until cooked all the way through.
Drain patties on a paper towel.
Serve as an appetizer or as an entree with rice and salad
Serves 4 people
The Wedge Salad
The Wedge Salad is one of my favorites when I’m taking a break from my diet. Easy to make and a great starter salad to a steak dinner.
INGREDIENTS:
1 head of fresh lettuce
Blue cheese dressing
3 strips of bacon
Salt and Pepper
PREPARATION:
Fry and drain the bacon slices. Cool, crumble and set aside.
Slice and separate the head of lettuce into 4 diferent wedges placing each on separate serving plates
Drizzle each wedge with the blue cheese dressing
Sprinkle crumbled bacon sparingly on top of each wedge
Dash all with salt and pepper for flavoring
Serve immediately. Serves 4 people.
